Parmigiana

Ingredients:

  • 2 small eggplants or 1 big

  • 2 fresh tomatoes or canned tomato sauce

  • 3 table spoons of olive oil

  • Leya’s Cultured Life BASIL

 

Preparation:

  1. Cut the eggplant into slices and sprinkle with salt

  2. Let it sit like that for a while so it doesn't get bitter

  3. Wash well and dry

  4. Spread tomato sauce or arrange fresh tomatoes on top

  5. Drizzle liberally with olive oil

  6. Bake for about 20-30 minutes or until soft - depends on the thickness of the eggplant

  7. Add Leya's Cultured Life Basil

  8. Garnish with fresh basil
